INGREDIENTS

For this recipe, all you need is some daily baking ingredients you probably keep stocked in your pantry.

Grab a mug, whisk and bowl then you’re good to go!

¼ cup all-purpose flour – I opted for white whole wheat flour to lighten things up, or Any brand of all-

purpose flour will do. Be sure to spoon and level the flour when measuring it, leave out the yeast and salt!

2 tablespoons light brown sugar – Sweetens the microwave cake without making it too sweet is to pack it down when measuring to press out any air pockets to get an accurate measurement.

¼ Tablespoon Baking Powder – baking powder is required , Helps the cake rise as it cooks.

1 pinch of salt – Just a little bit will help balance the flavors , You only need a tiny pinch.

3 tbsp milk – I always use whole milk because because it has more fat, and gives baked goods a richer taste. That being said, 2%, 1%, skim, or even almond milk would work fine too.

3 Tbsp Butter – because it needs to be melted for this recipe ,Put your butter in the microwave for 35-40 seconds . I like to use salted butter for my mug cakes because it adds more flavor, but unsalted is also good.

½ teaspoon vanilla extract – For the best flavor, Use pure vanilla extract, if possible , if you have vanilla paste or some shaved vanilla bean, you can use that.

2 tablespoons of chocolate chips – I prefer to use milk chocolate or semisweet mini pieces, but you can use whatever type you want.

How to make a Chocolate Mug Cake:

To start, you’ll need at least a 12-ounce mug. I suggest spraying the mug with nonstick cooking spray or greasing it with some butter so the cake doesn’t stick.

Mix the dry ingredients. You’ll whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and a tiny pinch of salt. Next, add the milk, oil, and vanilla extract and stir until just combined.

Add the wet ingredients. Add the wet ingredients. add the ½ teaspoon of vanilla extract, 3 tablespoons of melted butter and 3 tablespoons of milk, and mix until smooth and smooth. Then fold in your 2 tablespoons of chocolate chips . This step is optional, but I love them!

Cook and have fun! You’ll want to microwave the cake until the center is just set. Mine is usually perfect right at 1 minute and 15 seconds, but the cooking time will vary slightly depending on the mug you use and your microwave. Allow the mug cake to cool in the microwave for 1 minute before serving.

I also suggest keeping an eye on the mug cake as it’s cooking and stopping the microwave as soon as the center looks done. I’ve found that even an extra 15 seconds in the microwave can lead to a cake that’s really dry.

Gemma’s Pro Tips for Making the Best-Ever Chocolate Mug Cake

If you don’t eat eggs you can substitute them using my Egg Substitute Chart If you don’t have a microwave you can bake the mug cake at 350°F (180°C) for roughly 10 minutes ;Make sure your mug has no metal or metallic paint on it that will react in the microwave Don’t over-microwave! These only need seconds to cook so check after 45 seconds and go from there Take care not to over mix the mug cake as it can toughen the cake.

Ways to level up your chocolate mug cake?

Finish off with a scoop of ice cream: The only thing better than chocolate cake is a chocolate cake a la mode. Top your chocolate mug cake off with a scoop of vanilla ice cream and a drizzle of hot fudge sauce for the ultimate sundae.

Top with whipped cream: We always keep a can of whipped cream in our fridge. You know…for

emergencies. Finishing off your mug cake with a healthy dose of whipped cream for a light, creamy finish to your decadent chocolate cake.

Drizzle with caramel: Chocolate + caramel is one of the best flavor combos and it’s no exception here.

You can make your own or use store bought!

Add a spoonful of peanut butter: So this isn’t optional in my book. I HIGHLY recommend dropping a big dollop of PB in your batter before popping your mug cake in the microwave.

Stir in some chocolate chips: We like to stir in a tablespoon of chocolate chips to make this mug cake super super chocolatey.

STORAGE

if there is any leftover, but I’m sure that’s highly unlikely! Mug cakes do very well being stored at room temperature for up to 24 hours, but be sure to wrap them tightly with plastic wrap to keep them from drying out.

If you really want to make a mug cake to eat later, they can be frozen . Again, wrap the mug cake tightly with plastic wrap, place it in a freezer bag, and date it. You should eat your mug cake within 3-4 months .

Defrost your mug cake by placing it in the fridge overnight. If you don’t have time to wait, you can leave it on the counter to thaw, as long as you plan on eating it within a few hours.
